- Accessory Varieties: Courbu, Petit Courbu, Gros Manseng, and Petit Manseng
- Rouge: Min. 50% combined Cabernet Franc and Tannat; plus Cabernet Sauvignon (no variety may exceed 90%)
Assemblage
- Blanc: At least two varieties must be present in the blend.
- Rosé: Accessory varieties must not exceed 10% of the blend.
- Rouge: Min. 50% combined Cabernet Franc and Tannat
Minimum Potential Alcohol
- 11%
Minimum Must Weight
- 180 g/l (189 g/l for Tannat)
Maximum Residual Sugar
- Blanc: 5 g/l
- Rosé: 4 g/l
- Rouge: 3 g/l (4 g/l if potential alcohol is greater than 14%)
Harvest Method
- Hand-harvesting is mandatory.

- 4,000 vines per hectare
