Styles and Encépagement
- Blanc:
- Principal Varieties (20-60% each): Baroque and Gros Manseng
- Accessory Varieties (Max. 30% combined): Max. 10% Claverie, max. 10% Raffiat de Moncade, plus max. 20% combined Petit Manseng, Chenin Blanc, Sauvignon Blanc and Sauvignon Gris
- Rosé:
- Principal Varieties (20-60% each): Cabernet Franc and Tannat
- Accessory Varieties (Max. 30% combined): Max. 10% Merlot, plus max. 20% combined Cabernet Sauvignon and Fer
- Rouge: As for Rosé
Assemblage
- For all wines, both principal varieties must account for a combined min. 50% of the blend. No single variety may exceed 60%.
Minimum Potential Alcohol
- Blanc/Rosé: 11%
- Rouge: 11.5%
Minimum Must Weight
- Blanc/Rosé: 170 g/l (187 g/l for Gros Manseng and Petit Manseng)
- Rouge: 180 g/l (198 g/l for Tannat)
Maximum Residual Sugar
- Rosé: 4 g/l
- Rouge: 3 g/l
Minimum Planting Density
- 4,000 vines per hectare
Maximum Yield (Rendement de Base)
- Blanc/Rosé: 60 hl/ha
- Rouge: 55 hl/ha
