Summary
The Droin family have owned vineyards in Chablis for almost five centuries. The family has been very influential in Chablis through-out its history with members being president of the „Union des Propriétaires Vignerons de Chablis“ and members of the committee of the INAO. Today, the estate is run by Benoît Droin, the fourteenth generation, who took over from his father Jean-Paul Droin in 1999. In 2002 the Domaine’s name was changed to Domaine Jean Paul & Benoît Droin.
Style & Vinification Techniques
Droin says that he is near organic. The style of the estate used to be very heavy on oak, particularly with the wines of Benoît’s father. The oak regimen is now very different for almost every wine. The Petit Chablis, Chablis Villages, Côte de Lechet, Vaucopin, and Blanchotare fermented and aged in stainless steel. While the Fourchaume, Grenouilles, and Les Clos are aged in 50% wood and 50% stainless steel. Only some of the Grands Crus are aged with new oak, and never with more than 10%.
