Summary
The Drouhin family has a rich history, from Maurice Drouhin who was a leader in the French Resistance during World War II, to the four Drouhin members that run the estate today: Veronique, Frederic, Phiippe, and Laurent. Today they are one of the major players in the region, owning plots in some of the best vineyards. They purchased the Domaine de Vaudon, which is an old water mill on the Serein River. Since 2008 all Chablis from Drouhin is labeled as Drouhin-Vaudon.
Style & Vinification Techniques
Since the 1980s the Drouhin-Vaudon estate has worked to convert their vineyards to organic and biodynamic viticulture. Fermentation takes place in stainless steel for the village Chablis, and oak fermentation is utilized for all Grand Cru and some Premier Cru wines. The Chablis Village and some Premiers Crus are aged in stainless steel, other Premiers Crus and all Grands Crus are aged in „double-pièces“ for seven to eight months.
