This domaine is run by Stéphane Moreau, who took over the reigns in 1999. With such vignerons as Didier Dagueneau, Vincent Dauvissat, and Nadi Foucault (Clos Rougeard) as his inspiration, Stéphane has taken a different approach to his Chablis estate. He focuses on organic practices in the vineyards, low yields, and minimal sulfur added to his wines.
Style & Vinification Techniques
Stéphane harvests at low yields and has converted to organic viticulture. He ferments the wine with ambient yeast in stainless steel. There is minimal oak at this estate with only the two Premiers Crus and the Grand Cru seeing 10% large oak barrels.
