Summary
The estate was founded by the husband and wife team of Olivier and Francine Savary. Olivier’s father was not in the wine business, so Olivier and Francine had no vineyards of their own when they started. Instead they worked land as en métayage (share-cropping), selling off the majority of the crop to a négociant. Olivier’s childhood friend, Jean-Marie Raveneau, convinced the couple to start their own label.
Style & Vinification Techniques
All of the domaine’s vines are over 20 years in age. They practice Lutte Raisonée. The Savarys ferment their wines, both alcoholic and malolactic, in stainless steel cuve. The only wine to see any oak aging is the Chablis Vielles Vignes, of which sees 20% used French Oak Demi-Muid (600l).
