Summary
The Collet family have been involved in viticulture in Chablis since 1792. Jean Collet founded his namesake domaine in 1952, with the 24 hectares he owned at the time. In the beginning he sold to the négociant in bulk. By 1954 however he started bottling some of his own wines and by 1959 he was exporting the wine to the United States. In 1979 his son Gilles joined Jean in running the estate. Today, with a total of 35 ha., the wines are made by Gilles and his son Romain who joined his father in 2009.
Style & Vinification Techniques
The domaine practices Lutee Raisonnée in their vineyards, avoiding the use of insecticides and pesticides whenever possible. The approximate average yield for the domaine is 58 hl/ha. They harvest by hand and machine, with the Valmur Grand Crubeing the only wine marketed to be hand-harvested. Their Chablis, Chablis „Les Truffières“, and Petit Chablis are all fermented and aged in stainless steel. For the Premier Cru wines they have different practices depending on the vineyard. The Montmains only sees stainless steel. For the Vaillons and Vaillon „Secher“ they ferment in stainless steel, and then age 30% of the wine in 800 L foudre and the rest stainless steel. For the Mont de Milieu and Montée de Tonerre they give the same regimen as they do for the Grand Cru Valmur, which is 16 months in medium toasted pieces (228 L).
