Summary
Born to a Norwegian mother and an Israeli father, Bibi Graetz grew up in the medieval castle in Fiesole, just outside of Florence, where he still lives and makes his wines. Following in the footsteps of his father, a successful sculptor, Bibi graduated with a degree in art from Accademia dell’Arte in Florence. There, his interest in wine and farming turned to passion. On the family property were vines planted by his grandfather and farmed by the Graetz family. When contracts for the winemakers who had been purchasing the fruit approached expiration in the 1990s, Bibi decided to take the reins and begin producing wine, with a first vintage in 2000. He now organically farms 80 hectares of owned and leased vineyards. Bibi also designs the artwork for his labels.
Style & Vinification Techniques
Early vintages from Bibi Graetz were very concentrated, but beginning in 2004, he stopped viticulture practices meant to concentrate fruit and pulled back in the cellar. The red wines ferment and age in French barrique, with frequent punchdowns. Élevage lasts for 15 to 21 months, with additional time in bottle.
