  • Avvoltore Toscana IGP: 75% Sangiovese, 20% Cabernet Sauvignon, and 5% Syrah. One year of oak aging in 80% new French barriques. From a single-vineyard site in Massa Marittima named Poggio all’Avvoltore. Inaugural vintage 1988.
  • Barbaspinosa Monteregio di Massa Marittima DOC: 90% Sangiovese and 10% Cabernet Sauvignon. Aged one year in used Avvoltore barrels. Inaugural vintage 1996.
  • Morellino di Scansano DOCG: 90% Sangiovese with Cabernet Sauvignon, Merlot, and Syrah. Inaugural vintage 1981. Riserva made in very good years starting in 1988.

Summary

The Moris family arrived in the Maremma from Spain in the 1700s. Upon settling, they began farming a variety of crops and produced charcoal. At the end of the 1980s, they shifted their focus to grapegrowing and winemaking. Today, the estate is operated by Dr. Adolfo Parentini and his wife, Caterina Moris, along with their son Giulio. Caterina’s father was responsible for the switch to viticulture and the inaugural commercial vintage of 1988. Sangiovese is the primary grape on the property, with seven different clones planted. The vineyards range in altitude from 80 to 100 meters above sea level, and the estate employs a steady replanting cycle as some of the vines are quite old.

Style & Vinification Techniques

All wines are fermented in temperature-controlled stainless steel tanks. Red wines are fermented with ambient yeast, while whites are inoculated. French barriques are used throughout the winery, some new and some used. Tonneaux are used on the Morellino di Scansano DOCG wine. None of the wines are aged for more than a year in oak before resting for six months in bottle.
