Summary
The estate was originally Palomino & Vergara with twelve cellars collectively known as “Los Doce Disciples,” or “Twelve Disciples.” The principal cellar, Bodegas Dios Baco, was named for the Roman god of wine (Bacchus) and originally built in 1848. Palomino & Vergara became part of the Rumasa Corporation and then sold to Harvey’s after Rumasa dissolved.
The modern history of the bodega began in 1992 when the family Páez Morilla (known for their sherry vinegar) purchased the cellars and 40 hectares of vineyards. The Morilla family acquired this cellar and purchased several other older soleras. Today José Páez Morilla manages production with his daughter Alejandra who manages the business side. They produce limited quantities of Sherry and are well known for their Baco Imperial Line.
Style & Vinification Techniques
The bodega’s flagship wine “Fino Bulería” ages for a minimum of five years and their Oloroso ages for at least eight. Their classic range also includes the Manzanilla “Ría Pitá” which is similar in style of the Fino, flor-forward and full-bodied. Their finest offerings can be found within their Baco Imperial range, which includes an Amontillado and Pedro Ximénez, both labeled as VOS and an Oloroso and Palo Cortado, labeled VORS. Generally the wines are rich and fuller-bodied.
