Summary
The vineyards of the small Chipiona village are dedicated primarily to Moscatel because of the sandy arenas soils. After the gradual decline in Moscatel plantings and wine production over the past few decades, the village is now home to only two bodegas and a local cooperative. The current proprietor César Florido is the fifth generation of the Florido family to run the estate and has been nicknamed locally, “Mr. Moscatel” for maintaining the house’s specialty Moscatel production. He started as an almacenista and began bottling his wines for export in 1988. Florido’s wines are the only ones from Chipiona exported outside of Spain. Florido produces three dry wines, though they all fall outside the official zone and are not labeled Jerez-Xérès-Sherry.
Style & Vinification Techniques
Florido purchases grapes directly from growers and presses and ferments using indigenous yeasts in his own facilities.
The Moscatel Dorado is made from grapes that are fermented to 1-2% alcohol to retain sweetness (rather than from dried grapes). The wine is then fortified to 18% before aging in the solera. Moscatel Especial is made similarly with arope added, making the wine darker and more powerful than the Dorado. Moscatel Pasas is made from hand-harvested and selected grapes that are dried 2-3 weeks in the sun before fermentation and fortification in the solera, followed by 3-5 years of aging.
