Summary
Charles Louis Noël Billaud planted his first vines on the Mont de Milieu in 1815 after returning from the Napoleonic wars. Bernard Billaud took over the domaine in 1991, and is helped by his nephew Samuel. The domaine owns land in some of the best holdings in all of Chablis, with four Grands Crus, four Premiers Crus, a Village Chablis and a Petit Chablis. The winery is located just south of the village of Chablis on the river Serein. In 2014, the domaine was purchased by Domaine Faiveley of Nuits-Saint-Georges.
Style & Vinification Techniques
Since Bernard took over in 1991 the domaine has started to use less herbicides and to pick all by hand. Bernard also decided to ferment and age most of the wines in stainlees steel vats, with only the Mont de Milieu Vielles Vignes and the Les Blanchots Vielles Vignesseeing any aging in oak, with 60% in steel vats and 40% in 3-5 year old old barrels.
