Summary
Arnaud Ente is one of the more exciting up-and-coming names in Meursault. Arnaud worked at Coche Dury, eventually marrying Marie-Odile Thévenot in 1991 and the following year started work in Meursault. He helped farm vineyards rented from his father-in-law, Phillipe Thévenot. The domaine’s largest holdings are in the partially walled “deuxième cru” of En l’Ormeau, from which he produces his powerful but pure “Sève du Clos” and “Clos des Ambres” bottlings.
Style & Vinification Techniques
Very low yields and very clean fruit are the hallmarks of the Ente style. The white grapes are sorted and whole-cluster pressed, and after a brief settling, the juice is fermented in a maximum of 20% new oak with native yeasts. Wines are aged for 12 months in wood, then racked into stainless steel, where they rest for six months prior to bottling with no fining or filtration. The wines show great purity and focus and are worth seeking out.
