Summary
Joseph Chamonard was one of the earliest adherents to biodynamic and organic farming in Beaujolais; he also followed non-interventionist processes in his cellar. Joseph passed away in 1990, leaving the estate to his daughter Geneviève and her husband Jean-Claude Chanudet. Jean-Claude and his wife have carried on Joseph’s legacy both in the cellar and the vineyards, and like his father-in-law, Jean-Claude farms completely naturally.
Style & Vinification Techniques
Grapes are hand-harvested in October so as to obtain maximum ripeness; they undergo a pre-fermentation maceration for up to two weeks. Semi-carbonic fermentation begins in 3,000-liter tanks using indigenous yeasts. Grapes are pressed with a wooden vertical press, then moved to foudre. The wines age on their lees for eight to twelve months with no sulfur added until bottling.
