Summary
Defaix’s ancestors have been cultivating the vine since the sixteenth century near Chablis, and in producing within the region itself since the eighteenth century. Today the property is run by Daniel-Etienne Defaix who oversees the 26 hectares, primarily in premier cru vineyards. The estate produces two AC Chablis cuvée, three Premiers Crus, two Grands Crus, and a Bourgogne rouge. The estate uses no oak and keeps wine in bottle until it is felt the wines are ready for consumption.
Style & Vinification Techniques
Daniel-Étienne Defaix fertilizes only with natural compost and manure. Only ambient yeast is used and all wines see aging in stainless steel and malolactic fermentation. They stay on their lees for up to 18 months with before addition of sulfur. No filtration or fining is done.
