Summary

Chantal and Éric Coudert-Appert are the seventh generation of their family to work the vineyards of Domaine de la Chapelle des Bois. Chantal studied at the viticultural school in Beaune and took over following her father’s retirement in 1991. The couple farms the entirety of the estate and makes the wines entirely themselves. They have followed the principles of “integrated” and lutte raisonnée farming in their vineyards since 1999, treating their vines only when absolutely necessary for the health of the vines.


Style & Vinification Techniques

Grapes are hand-harvested and fermented in the traditional Beaujolais style using semi-carbonic maceration. Chantal and Éric use grids placed on top of the tanks and partially submerged in order to keep solid matter in sustained contact with the fermenting juice; this is supplemented by a twice-a-day remontage. After 10-15 days the fruit is pressed. Only the Fleurie “Vieilles Vignes de la Cadole” is aged in oak for twelve months in large foudres.
