Summary

The estate is run by Sébastien Dauvissat, who took over after his father Jean died in an accident. Sébastien is the cousin of Vincent and René of the other Dauvissat estate. Jean started larger production in the 1978 and 1979 vintages, when they began bottling 3,000 bottles a year. The winery is located in the southern part of the town of Chablis on the road down to Chichée. Sébastien now makes one Grand Cru wine and four Premier Cru wines. Their basic Chablis is called Saint Pierre and comes from vineyard parcels that border their premier cru vineyards.


Style & Vinification Techniques

Yields vary between vineyards and vintages. The village Chablis may reach as high 60 hl/ha and the old vine parcel of Vaillons may be as low 25 hl/ha. Most of the Premier Cru and the Chablis Village are fermented and aged in stainless steel. The Vaillons Vielle Vignes is partially fermented and aged in oak barrels, with 25% of the oak being new. Les Preuses is fermented and aged in the same way. The wines are bottled between 18 and 20 months after harvest.
