Summary

Jean-Philippe Fichet began producing wine under his own name in 1981, thereby beginning his first métayage arrangement at the age of just 21. Unfortunately, in 1991 he lost 85% of his vineyards when these arrangements expired, but as he had garnered an excellent reputation for good vineyard work, he was soon able to find two vineyard owners willing to give him new leases. Careful and thorough vineyard work is Fichet’s signature, enabling him to produce clean and expressive wines.


Style & Vinification Techniques

After careful sorting in the vineyard, the white grapes are crushed, pressed and settled for 12-24 hours. The regional wines are fermented and aged in 600-liter casks, while the village and premier cru wines go into 228-liter barriques (30% of which are new each year). Bâtonnage is practiced, but the frequency varies with vintage conditions. The regional wines spend a year in oak, and the top wines spend 18 months in wood prior to being bottled without filtration.
