Summary
The estate began with the marriage of Laurent Tribut to Marie-Clothilde Dauvissat, Vincent Dauvissat’s sister. In fact the wines were first produced in the Dauvissat cellars until the couple set up shop in the village of Poinchy. They have parcels of Chablis AOP vineyards which border the vineyards of the Dauvissat’s, which Marie-Clothilde’s parents purchased for her and her siblings as children. Tribut makes wines very similar to Dauvissat, with similar approaches to harvest and fermentation.
Style & Vinification Techniques
The philosophy in the vineyard is Lutte Raisonnée with the use of pesticides and herbicides. All grapes are hand-harvested at this estate. Tribut uses only ambient yeasts for fermentation which takes place in temperature controlled enameled tanks and the wines are allowed to go through malolactic fermentation. The wine is then racked into 228 litre casks, with 10% being new oak, and the rest between 5 and 7 years old. Tribut, like Dauvissat does not perform any bâttonage on the wines. A fining is done five to six weeks before bottling and a light filtration at the time of bottliing.
