Summary
Dr. Su Hua and Peter Newton founded Newton Vineyard in 1977 when they purchased one square mile of hillside on Spring Mountain. Vineyards were planted throughout the purchased land and broken up into 112 separate parcels. The winery was built to allow gravity flow and caves were dug and installed for both aging and cooler temperature fermentation of Chardonnay. The vineyards are farmed as organically as possible without the use of herbicides, pesticides or synthetic fertilizers. Newton was purchased by LVMH in 2003.
Style & Vinification Techniques
Chardonnay wines are barrel fermented with indigenous yeasts and minimal sulfur use. Wines are not inoculated for malolactic fermentation though it is encouraged. Wines undergo weekly bâtonnage during élevage. Exclusively French oak is used for aging, typically between 12-15 months. Certain wines are bottled unfiltered.
