Summary
Patz & Hall was founded by Flora Springs co-workers, James Hall and Donald Patz, with a goal of producing limited production Chardonnay and Pinot Noir from the best vineyards across California. Their current list of sourced vineyard fruit includes producers such as Lee Hudson, Larry Hyde, and Gary Pisoni. Winemaking is led by James Hall. Donald Patz left the company in April of 2017.
Style & Vinification Techniques
Patz and Hall’s vineyard contracts give them control of how grapes are grown for their wines including farming, pruning, leaf management, cluster thinning, and harvesting. Harvesting takes place when the grapes achieve proper physiological ripeness with an eye toward maintaining “freshening” acidity. Fruit is hand-harvested and sorted twice—in the vineyard and later in the winery—before being whole cluster pressed. Juice is racked into French Oak barrels for fermentation. Generally about 50% new French Oak (3 year air-dried stave) barrels are used for each wine. 100% indigenous yeast is used for fermentation. Wines receive regular stirring of the lees and undergo 100% malolactic fermentation. After 11 months on the lees the wines are bottled without filtration.
