Summary

Tahbilk estate was originally named Chateau Tahbilk in 1877 to aid sales in Europe, but in 2000 “Chateau” was officially dropped from the name. It’s current owners, the Purbrick family, purchased the winery in 1925 intending to uproot the vineyards and convert the land to dairy farms. Instead, second generation Eric Purbrick rehabilitated the winery and created what is now modern-day Tahbilk. The winery is now in its fifth generation of Purbrick ownership. The oldest vines on the property were planted in 1860. This small surviving parcel produces the flagship “1860 Vines” Shiraz. The estate also boasts the largest single holding of Marsanne in the world.


Style & Vinification Techniques

White wines are fermented in temperature-controlled stainless steel by cultivated yeasts strains. The Chardonnay is aged in French and American oak barrels for up to a year. The whites are fined and filtered before bottling. Red wines are fermented in oak fermenters by cultivated yeasts strains for an average 7-10 days. After pressing in a membrane press, the wines ages in large oak casks, many more than100 years old. The reds average 18 months aging in oak and are filtered prior to bottling. After bottling, wines are held to age in bottle for 12-18 months before release.
