Summary
Thomas Pico comes from generations of vignerons in Chablis. His family’s estate, run by his father, is named Domaine de Bois d’Yver. In 2005 he started his own estate with vineyards he inherited from his family. Thomas named his estate Domaine Patte Loup („the paw of the wolf“), and made the focus of the estate organic viticulture. In 2009 the domaine was certified organic by ECOCERT. He is close friends with Alice and Olivier DeMoor, also in Courgis, whose biodynamic practices and „different“ approach to making Chablis were an inspiration to him. The two estates are an anomaly in Chablis, in that few estates have taken this direction.
Style & Vinification Techniques
Most of the vineyards were planted with selection massale cuttings by Pico’s grandfather. Pico does not use any pesticides or herbicides in his vineyards, and became certified organic by ECOCERT in 2009. All vineyards are harvested by hand. All grapes are hand sorted on a vibrating table de trie. He uses only ambient yeasts for fermentation. The Beauregard and the Vent d’Ange are fermented in stainless steel, with part of the wines being aged in concrete egg. The Côte de Jouan and the Butteaux are fermented in old large oak barrels, and then aged in the same vessels. Pico adds minimal sulfur to the wines.
