  • Chianti Classico: 100% Sangiovese di Lamole. Aged 10 months in lined ceramic vats. Inaugural vintage 2009.
  • Il Carbonaione Alta Valle Della Greve IGP: 100% Sangiovese sourced from 90-year-old vines on a west/southwest-facing vineyard at approximately 1,500 feet elevation. Aged 15 months in a mix of new and one-year-old 350-liter barrels, consisting of 90% French and 10% American oak. 2,500 cases produced. Inaugural vintage 1992.
  • Piantonaia: 100% Merlot. Aged 18 months in new French barriques. Inaugural vintage 1999.
  • Capogatto Alta Valle Della Greve IGP: 25% each of Merlot, Cabernet Sauvignon, Cabernet Franc, and Petit Verdot. Sourced from younger vines at 1,300 feet elevation on a south-facing slope. Aged 18 months in a mix of new and one-year-old 225-liter French barriques. 150 cases produced. Inaugural vintage 2007.

Summary

In 1991, Vittorio Fiore purchased an abandoned estate in the high hill surrounding Greve. Il Carbonaione, named for the surrounding hillside terraces, grew to 40 hectares after the purchase of a nearby vineyard in 1996. Il Carbonaione is believed to be the first vineyard planted after World War I and phylloxera; the vines are among the oldest in Tuscany. Vittorio oversees the estate, which is directly run by his wife, Adriana, and son, Jurij, who studied viticulture and oenology in Beaune. Scalette is noted for using the Lamole clone of Sangiovese, a derivative of Sangiovese Grosso, and produces Chianti Classico from 20- to 90-year-old vines based on this clone.

Style & Vinification Techniques

Fermentation takes place primarily in concrete vats and stainless steel before wines are transferred to barrels for aging. The reds see a minimum of six months of bottle age prior to release.
