Styles and Encépagement
- Blanc: Chardonnay, Pinot Blanc, and a max. 30% Pinot Gris.
- Blanc Nouveau/Primeur
- Rosé (Clairet): Pinot Noir and Pinot Gris, plus a max. 15% mixed plantings of Chardonnay, Pinot Blanc, and César (César is only allowed in the Yonne département, and up to a max. 10%).
- Rouge: Pinot Noir, plus a max. 15% mixed plantings of Chardonnay, Pinot Blanc, Pinot Gris, and César (César is only allowed in the Yonne département, and up to a max. 10%). In the region of the Beaujolais Cru AOCs, Gamay may account for up to 30% of the vineyard.
- Varietal-Labeled Gamay: vineyards must be located in the region of the Beaujolais Cru AOCs.
- Tressot may be used for red wines, but may not be replanted.
Assemblage
- Blanc: Pinot Gris may not exceed 30% of the blend.
- Rosé: César may not exceed 49% of the blend.
- Rouge: César may not exceed 49% of the blend. Gamay may not exceed 30% of the blend.
- Gamay: Min. 85% Gamay
Minimum Potential Alcohol
- Blanc: 10.5%
- Rosé/Rouge: 10.2% (10% prior to 2011)
- Wines labeled by Geographical Designation: 10.5%
Minimum Must Weights
- Blanc: 170 g/l (153 g/l prior to 2011)
- Rosé: 165 g/l (153 g/l prior to 2011)
- Rouge: 175 g/l (162 g/l prior to 2011)
