Grape Varieties
- Bianco:
- 60-65% Fiano,
- 20-30% Trebbiano Toscano,
- 10-15% combined Greco and/or Malvasia Bianca,

- Rosato:
- 70-80% Sangiovese,
- 10-15% Aglianico,
- 10-15% combined Primitivo and/or Piedirosso,
- max. 10% other grapes suitable for production in Salerno.
- Rosso:
- 60-75% Aglianico,
- 15-20% combined Primitivo and/or Piedirosso,
- max. 10% other grapes suitable for production in Salerno.
Minimum Alcohol
- Bianco/Rosato: 11%
- Rosso: 11.5%
- Fiano/Aglianico: 12%
Minimum Total Acidity
- 5 g/l
Aging Requirements
- Aglianico: Wines must be aged for 1 year from November 1 of the year of harvest.
- Aglianico Riserva: Wines must be aged for min. 3 years, including min. 2 years in cask, from January 1 on the year after harvest.
Maximum Yields
- 10 tons/ha

- Max. 450 meters (except for the commune of Moio della Civitella where it is max. 550 meters)
