Styles and Encépagement

- Principal Varieties (must contain at least two): Syrah (min 30%), Grenache, Mourvèdre
- Accessory Varieties: Max 30% Cinsault, max 10% combined Counoise and Grenache Gris
- Rouge:
- Principal Varieties (must contain at least two): Syrah (min 50%), Grenache, Mourvèdre
- Accessory Varieties: Max 10% combined Cinsault, Carignan, Counoise and Morrastel
- The above provisions do not apply to growers with less than 1.5 ha, provided the main varieties account for at least 50% of the vineyard.
Assemblage
- Rosé and Rouge: Per encépagement
Minimum Alcohol
- Rosé and Rouge: 12%
Minimum Must Weight
- Rosé and Rouge: 202 g/l
Maximum Residual Sugar
- Rosé: 4 g/l
- Rouge
- 3 g/l for wines below 14% ABV
- 4 g/l for wines above 14% ABV
Élevage
- Rouge wines must be in élevage until at least July 15 of the year following harvest.
Minimum Planting Density
- 5,500 vines per hectare
Maximum Yield (Rendement de Base)
- Rosé and Rouge: 45 hl/ha
