As beverage manager Oscar is responsible for managing the hotel’s bar, lounge and restaurant wine list with 1200 bins and 10,000 bottles in the cellar.

Oscar tells us how he has progressed in the wine trade – after living in France for 6 years he returned to the UK at the age of 17 to work in a restaurant as a waiter and over about 5 years worked at several bars and restaurants (including Chewton Glen) until coming back to Chewton Glen as head sommelier. A year later he took on the role of beverage manager, managing a team of sommeliers. Oscar gives us the inside track on the role and the career opportunities for waiters and sommeliers.
