Episode 449 – FlavorActiV with Dale Smith and Marcia Waters MW
Dale is the director of operations and Marcia is the wine consultant at FlavorActiV, a beverage sensory training company which has a worldwide team of multilingual Global Sensory Managers. These teams deliver training courses for quality controllers to learn how to taste their products and recognise key flavours. They have developed a range of flavour standards, in powder form, that are used to re-create certain flavours in beverages. They work closely with the beer industry, soft drinks industry and are moving into wines and spirits.

Marcia Waters tells us about the wine kit they are launching specifically as an introduction to the 4 most common wine faults: cork taint, volatile acidity, sulphur and brettanomyces. The powders come in a capsule which is put into the bottle of wine to replicate the fault. You can then smell and taste the wine as if it was faulty and compare to a clean bottle.
