In this third interview we discuss the grape varieties including Touriga Nacional and the late ripening Touriga Franca, which both give elegance, depth and complexity, and Tinta Barocca which gives the wines backbone. We also discuss the Portuguese laws which govern (and restrict) the production of Port and which Paul believes are in need of reform.
