Episode 589 – Soave with Andrea Sartori
The main grape variety in Soave is Garganega which Andrea describes as a flexible and versatile grape used for both everyday Soave and the higher quality Classico as well as sparkling and even a passito Recioto style. Soave is located in the Veneto region in northeast Italy and the appellation produces around 40-50 million bottles a year with about 50-60% exported globally. You can also have Trebbiano Veronese in the blend although more growers nearby are planting Pinot Grigio, though this isn’t a permitted grape.
