We talk about reductive wine-making, which involves ensuring the process is free from oxygen for example during the pressing of the grapes. The fermentation tanks range in size from small to the biggest which is 3000 litres/4000 bottles. For his Bacchus Ben uses smaller tanks and barrels which means they can ferment smaller batches of wine from different parcels of grapes to then blend later. They are currently buying in grapes from contract growers around East Anglia (Norfolk and Essex) and are yet to make from their own vineyards. They have produced Pinot Blanc as well as Bacchus under the Flint label.
