In France, with the exception of Champagne, red grapes must be used to make rose. Blending white and red is not allowed. The skins are left in contact for a few days for up to a week to get both colour and flavours into the wine. They are always removed before alcoholic fermentation takes place. We get technical, talking about acidification and chaptalisation, and discuss the maceration and fermentation processes. We talk about the blend and style of the wine which is designed to be food friendly.
